   什锦豆腐丸子

  材料:

  豆腐(北豆腐),香菇,荸荠,黄瓜,胡萝卜,口蘑。

  调料:

  盐,胡椒粉,酱油,香油,水淀粉。

  做法:

  1、将豆腐洗净后在沸水中焯一下取出;黄瓜、胡萝卜洗净后切片;口蘑洗净切片;荸荠洗净去皮切末;香菇洗净切末。

  2、将焯好的豆腐控干水分后捣成泥状,将捣好的豆腐泥用纱布包起来,拧干水分,然后与香菇末,荸荠末搅拌在一起,加盐和胡椒粉、盐调味,捏成大小适中的丸子,放入蒸锅蒸10分钟左右即可。

  3、在锅中加入适量清水,烧开,放入黄瓜片、胡萝卜片和口蘑片,加适量盐、酱油和胡椒粉调味,最后用水淀粉勾芡,这时可以将蒸好的豆腐丸子下入锅中裹匀芡汁。
